11 Healthy Cabbage Recipes

When you think of cabbage, do you think of a garnish used to add color or fill in the white space on a plate? Or worse, do you remember watery, mushy, or chewy boiled cabbage that a relative over-boiled with cured meat? If so, then you share my shock and surprise that, at least until recently, I've been missing out on the vitamins and nutrients packed into this water-rich super food. Cabbage has more vitamin C than an orange is a great source of vitamins A, K and also is high in folate and fiber too.  I like the flavor that it adds to soups and salads. My favorite recipe in the "The SparkPeople Cookbookis Chef Meg’s Minestrone Soup and much of the flavor and nutrition comes from the two cups and chopped cabbage in this recipe. Use these cabbage recipes to add extra vegetables to your nutritional intake.

I love cabbage. My favorites are these:
1) shredded red & green in coleslaw
2) sauteed w/ minced apples & squash then add a bit of ACV w/ brown sugar
3) chopped savoy in stir fry
4) added to cut up smoked sausage link (like kielbasa or turkey franks) & leftover diced potatoes
Plus how could you leave out brussel sprouts from the same family? I cut those in half & caramelize w/ baby carrots then steam for a couple minutes in pineapple juice.🐨 Report

WE eat lots of cabbage in this house. One of my favorite Mexican restaurants serve their street tacos an a beg of shredded cabbage---delicious! Report

I recently started cooking a lot with a wok, I do a Singapore Mei Fun with brown rice noodle and handfuls of shredded cabbage. It's delicious, highly recommend! (main seasoning is curry, no added sugar) Report
OH! I just thought of something - our famous Wichita "Garlic Salad" recipes are low carb high fat (LCHF/Keto) friendly!! They are essentially a slaw made with cabbage and mayonnaise and garlic. None of the sugary stuff. Yay! Report

These are NICE recipes. AND, one can always leave out the oil on most. That is my problem with (delicious) roasted cabbage slices/"steaks", brushing on oil. I am going to experiment with an oil-free or just a spritzed pan version. So far I haven't found one online. Report
How could you leave out roasted!?! A bit of olive oil, sliced cabbage "steaks", 450 oven. Heaven!
I agree, Cabbage itself is great for weight loss. Cabbage Lentil Vegetable Soup looks so yummy and is amazingly low in calories. It's a must try. I found

All I want is a diet plan. What I should eat every meal. Breakfast, Lunch and Supper. I like easy not hard. If it's going to be hard forget it. If I have to write down what I eat ok. Just give me a choice of what I can eat Report
