Easy Recipe: California Roll in a Bowl

Ever get stuck in a dinner rut? I sure do! Recently, while digging around in the 100-page homemade recipe file I keep on my computer, (I like to cook. Can you tell?) I found a salad I created about four years ago.

Delicious and easy, it combines all of my favorite sushi ingredients in one bowl! And, because it's based on a California roll, it uses fully cooked seafood. This is a great way to introduce friends and family to the taste of sushi. Add slivered sushi ginger, bits of nori (seaweed), and sesame seeds to make it even more authentic.

  • 1 cup brown rice, cooked (1/2 c dry)
  • 1 head butter or romaine lettuce, chopped
  • 8 oz. imitation crab meat or cooked shrimp, chopped
  • 1 English (seedless) cucumber, thinly sliced (and peeled if not organic)
  • 1 ripe avocado, diced
  • 1 carrot, grated
  • 3 T pickled ginger, chopped (available in the Asian section of most supermarkets)

  • 3 T rice wine vinegar
  • 2 T light soy sauce
  • Wasabi powder to taste (start with 1/2 t)

Combine all ingredients for dressing in a small bowl and whisk ingredients together.

Optional garnishes:
  • 1 T sesame seeds
  • 1 large sheet nori (seaweed), toasted and broken into small pieces

Divide clean, dry and chopped lettuce among four large bowls. Top with crab meat, avocado, cucumber, carrot, rice and ginger. Drizzle dressing over salads, then top with sesame seeds and nori.

Looks very good.

Californial rolls, in my opinion, usually are without fish, though. I'd make this without the fish, just some veggies.

For the sodium, I'd cut the amount of light soy sauce in half and mix that with an equal amount of plain water with maybe some flavor of one of the Mrs. Dash blends shaken in. Doing this cuts the sodium but surprisingly the taste and consistency don't really suffer.

I think this is a great idea - regardless of one's tastes, turning your favorite sushi rolls into a salad opens up tons of possibilities, depending on what's in season. Awesome! Report

I made this last night, omitting the seafood and adding some edamame. YUMMY! My kids went at it like it was the best thing they ever tasted. They love sushi and would eat it every day if I made it, but this, I can make at least once a week. Thanks so much for this recipe. Report

Oh yum!! You bet I'd try this recipe.......I LOVE California rolls but in order to make them myself I have to purchase many of the needed items from a sushi store online with exception to what the stores in our area call "normal" food......and to be able to treat myself to them without making them I have to drive 90 miles *sigh* Report

sounds good to me. i love the vegetable sushi rolls but have never been brave enough to try raw fish of any sort. This sounds like a healthy and tasty alternative. I'll diffinitely give it a try soon. Thanks! Report
Just as MDTWEETY said, sounds good but I don't eat shellfish. *A word of caution...if you are allergic to shellfish, avoid even imitation shellfish because it contains crab or lobster extract in most cases.* I love sushi with tuna and salmon that is devoid of shellfish, and my favorite is a Philadelphia Roll. Now, Stepfanie, can you come up with a salad that uses the ingredients for that one?! :o) Report

Thanks! I will definitely make this! I love sushi and sashimi, and this recipe will make it easy to have a similar eating experience at home without much work. I might even use some sashimi-grade raw tuna as an occasional substitute for shrimp. Report
