Preheat oven to 350ºF Slice the eggplant thinly or chop it. Layer with canned tomatoes (Furmano's the best) or slice some tomatoes Each layer sprinkle lightly with salt, basil, oregano, thyme, chopped garlic and chopped onion. Final layer is Kraft's parmesan cheese in green can or TJ's shredded parmesan cheese. Don't put it on right away.
I've had some less than good ovens, so in those I would start baking without parmesan and cover with foil to cook everything for 20 mins. Then remove foil, add parmesan and bake 20 more mins.
