I was asked to make a spinach citrus salad, but couldn't find a recipe for it...other than orange poppy seed. I didn't want to make a trip to the store JUST for poppy seed.
anyone have other suggestions?

2 parts olive oil, 1 part balsamic vinegar (lots of flavors to try) a bit of brown mustard. I like simple.

1/2 cup of plain yogurt (can be any variety nonfat-whole)
1 TBS Tahini
1 clove garlic minced fine
Juice of half a lemon
salt to taste
fresh mint and/or cilantro if you have, but totally worth it even without the herbs.

This is great on green salad, chickpeas, on grilled chicken, or as a dip for veggies.

That sounds great. I have some cashews soaking now and will finish tomorrow.

If you like a creamy dressing, soaked cashews make an amazing base! I recently made a creamy poppyseed and it was fantastic and tasted like the real deal! Puree them after soaking overnight with some honey, mustard, poppyseeds and thin it down with some of the cashew water or some almond milk. I do a creamy Caesar too with greek yogurt and add a dab of anchovy paste, parmesan, lemon juice, garlic and black pepper. As much as I love them, I get sick of vinaigrettes and miss my creamy dressings! There are ways to get around all those calories though ;-)

Thanks for the recipe. Will try that at lunch. I have a aero-garden full of greens growing which is so cool in the winter to pick fresh lettuce.

Chopped shallot, balsamic, Dijon, a small amount of honey (optional), salt, pepper, then wisk in olive oil.

My favorite has no sugar. Start with 1/4C olive oil and 1/2C lemon juice. I add a dash or two of black pepper and a dash or two of dried oregano. Shake well. If you like it you can double the recipe if and refrigerate what you don't use. Also, try different herbs if you prefer.

Love all kinds of lettuces and kale salads but does anybody have a tasty go to dressing that is not too high in sugar? Thanks, RoxAnne
