How about cajun salmon with Mango salsa?

Put your favorite dried cajun seasoning on the salmon and bake.
When serving top with the mango salsa. Wonderful with a side of rice & broccoli

Mango salsa topping

1 mango
1/2 sweet red peppers
jalepeno finely diced to taste.
fresh pineapple w/ juice
cilantro
Mix all the ingredients and toss. I sometimes double the recipe and freeze it in 1/4 cup containers or small snack baggies.... this way it's a quick easy tasty dinner.

I like to mix some butter or olive oil with lemon juice, a bit of mustard or honey mustard, and parsley. I top the salmon with it to cook. I also like a bit of homemade salsa with it. I chop tomato, onion, cucumber or zucchini or both, a bit of fruit like strawberries, oranges or apples, and mix in a bit of balsamic vinegar. A couple tablespoons over the cooked salmon is so good. I usually serve the salmon on top of about 1/4 cup of chopped spinach with a bit of lemon juice.
I usually cook enough to top a salad for lunch the next day with some salmon and a good bit of the salsa.

Great posting....headed out the door to get some Salmon. I am changing what I was going to eat tonight but I am very lucky to be a country I can do that. Thanks for the great ideas and taking time to share. What a great healthy way to eat dinner. Thanks again.

Sounds yummy! I just bought a big piece of salmon and cut into single serving chunks. I will use the dil on it.

My favorite herb for salmon is dill. I happen to grow fresh, but dried works too. Season the salmon, baste with a little olive oil and cook however you choose. I often just put it in a non stick pan or bake in the oven.

I like to cook salmon with a little butter or olive oil, some black pepper and a dash of thyme. Then when nearly done, I squeeze a little fresh lemon or lime juice over the fish, put a lid on the pan and turn off the heat.

It's also nice with chives, or italian herbs if you don't have/like thyme.

I have some salmon to cook tonight....what is your favorite way of having it? Please share. I usually do butter and garlic but I am wanting something different.
