Being Polish, I was brought up on sauerkraut lol.
I usually rinse the sauerkraut, then add in finely grated carrot and season with black pepper, a teaspoon of sugar/sweetener, olive oil and white wine vinegar.

Don't know if this is the one you are looking for, but here is one:

1/4 c. salad or olive oil
1 1/2 tsp. sugar
1 tsp. caraway seed
1/2 tsp. salt
1 tsp. vinegar
1 lbs. sauerkraut, drained
2 med. tart apples, peeled, cored and diced
3/4 c. grated carrot

Combine oil, sugar, caraway seeds, salt and vinegar. Rinse and drain sauerkraut well, chop. Stir into oil mixture. Add apples and carrots; toss to mix well. Yields: about 6 servings.

I just tried this variation but made it without the honey (I'm a Type 2 ). Delicious


I just searched SparkRecipes and got a bunch of them. Nice thing is that the calories and carbs show up.

My mother used to make a wonderful salad using Sour Kraut. I just remembered it today. She has passed away now and I want to know if anyone has a recipe for this. I remember it had grated carrots. We used to make it in a big jar and let it set in the refrigerator about 24 hours before we would eat it.
