Kevin, You can make recipes with half the fat replaced with applesauce or other pureed fruit. Sometimes switching the flour to 100% whole wheat will help. I do this with bar cookies, some cakes, and quick breads. It sometimes changes the cooking time, but I bake by sight so I can not tell you how much.

Found this the other day. I also HATE artificial sweeteners. I am yet to try these but might make them on my day off as blueberries are in season right now. http://allrecipes.com/recipe/228483/best -100-calorie-blueberry-muffins/ Oh not exactly weight loss, but low calorie treat!

Hi all, On the lookout for healthy, low-carb baking (muffins, scones, etc) without using artificial sweeteners. I don't like that awful aftertaste. Is this possible???
