Brown sausage and drain excess fat and then slice the sausage thin. Mix all together, bring to a boil, reduce heat simmer for 30 to 40 minutes covered. GREEN PEPPER CUT INTO STRIPS (OPTIONAL) if using in the soup add the peppers during the last 1- minutes of cooking time.

I second the roast chicken. You could also do fliet mignon, fish, or pork chops. Just depends on what you guys like. Cooking Light is my favorite source for recipes, and they offer a free database on their website.
My special "go to" meal is roast chicken. Buy a Perdue oven stuffer roaster, you can't mess it up because it has a pop up timer. Smear the bird with a bit of olive oil and lots of paprika. Roast some onion, sweet potatoes and celery too. Yummmm
You will have lots of left overs to make chicken salad, chicken fajitas, chicken soup etc etc
