    Thanks for stopping by my blog. Spices used in Moroccan chicken:
    1/2 tsp cinnamon
    1/2 tsp ginger
    1/2 tsp tumeric
    1/2 tsp black pepper
    dash ground cloves

    The original recipe uses
    1 lb chicken breast
    1 to 1-1/2 cup cubed eggplant
    3/4 cup chopped onion
    1-1/2 cup chopped or sliced bell peppers
    1 (14oz) can diced tomatoes

    Cook chicken separately. Saute veggies, add a little water and simmer for 10 mins. Add tomatoes and spices, bring to boil then simmer uncovered for 10 mins.

    I use whatever veggies I have handy (carrots, chickpeas, zucchini, mushrooms)
    small can tomato sauce

    I live in Mexico where fresh produce is inexpensive And readily available at the local markets. Fresh seafood as well but the chicken is rather scary here, very yellow and not quite like what I'm used to. I buy large trays of packaged chicken breast at the Sams in Guaymas and freeze in portions - enough for about 2 weeks at a time.
    Life is good here, a little challenging at times but always fun.
