I have begun a new way of thinking about food and eating. Whole30. If you haven't heard of it; look it up. It's an elimination/reintroduction plan to help you realize foods that you may be sensitive to. I've found out that I can't eat corn, wheat, peanuts or super-sugary things. They all make me tired, achey, have GI upset and more. It was surprising and shocking as I'd eaten those foods my entire life! It's an elimination/reintroduction plan to help you realize foods that you may be sensitive to. I've found out that I can't eat corn, wheat, peanuts or super-sugary things. They all make me tired, achey, have GI upset and more. It was surprising and shocking as I'd eaten those foods my entire life! But eliminating and then reintroducing slowly to find the problems was eye-opening! I also fell in love with my kitchen and found it to be a wonderful creative outlet for me.
I have three great kids. One married, one in grad school and one starting her sophomore year of college next fall. I want to be around to thoroughly enjoy them more. And to be able to have tons of fun with my sweet granddaughter who is almost a year old!! I also don't want to be a burden to them; being too large to do things for myself, or too disabled to get around on my own. I was also diagnosed with arthritis in my lower back, pelvis, right hip and both knees; mild situational depression; NAFLD; as well as vascular insufficiency in my lower legs - this is actually improving with moving around more and drinking GALLONS of water. I'm too young for support hose!! Not really, but I need to make the changes that will make these diagnoses less severe. The Whole30 plan has alleviated lots of these medical issues. Cured? Not all. But the depression is gone, the arthritis is less painful, the inflammation is gone and the vascular insufficiency is nearly gone!! I will get more LFT's done this summer to see if my NAFLD has improved.
My 19 year old daughter has had some chronic health issues that have already benefitted from my changes on Whole30. She's on board with me and excited to try some new foods and recipes. She heads off to SE Asia this summer and is in full "work-out" mode; as she will be hiking in the mountains most days while she's there.

Divorced mom of 3 great kiddos. Also mom to 4 fur-babies; 1 canine, 2 feline. I play the piano for all the choirs at our high school. I am also the Worship Coordinator at my church; playing keyboard and singing on the Worship Team. I'm heading back to college to get my degree in Christian counseling.
