Ever wake up and all you can think about is a giant salad? 🤷♀️😍When you really really want the “good” ice cream for dessert 😉 Dinner is zoodles in marinara sauce with white beans for protein and fiber. It’s less than 300 calories and filling enough to keep me from bingeing on the ice cream.The kids are all my planned leftover vegetables ❤️This is our town. We've lived here for almost two years. Volcanoes Fuego and Acatenango, Fuego is quite active but my husband climbed Acatenango last year.This is Volcano Pacaya, my husband and oldest son climbed it last year. (My son road a horse up it.)Meal Prep Monday! I made a Flax Muffin in a Mug by @NEWDEBBIE on sparkrecipes. I liked it so much that I prepped the dry ingredients for next time!I felt a “binge” coming on so I made a huge batch of vegetable rice (zucchini, broccoli, and carrots cut up like rice) with sautéed chicken breast, kale, and spinach seasoned with a little bit of soy sauce and sesame oil and a lot of garlic and ginger.Almost kung pao chickpeas with veggies , protein and fiber with flavor!It’s going to be a busy day so dinner is in the crockpot and ready for when we get home!Copycat Applebee’s Asian Chicken salad with my ginger sesame dressingSometimes it’s so hard to eat healthy outside of the house here. Fresh fruits and veggies can’t normally be trusted to be clean so many of my options are fried foods. Today, we ventured into the city and I had a trustworthy salad with an amazing low calorie strawberry vinaigrette. #thankfulIt’s licha season in Guatemala! These are known as rambutan in other parts of the world. They taste like mild grapes with the same texture but there’s a big pit in the middle. The pits are poisonous but look like almonds. They are some of my favorite treats.Kale, sweet potato, lentils, leek, onions and peppers became a hearty soup for lunchSaving the princess with my kiddos and burning over 1000 calories! #moveitI can eat a huge breakfast when I make sure to add veggies! #eattherainbowOne egg and three egg whites filled with sautéed tomatoes and a side of perfectly baked sweet potatoJust a friendly reminder that if you’re following the plan and making smart choices then you might see the scale move the wrong way but it’s normal and your changes WILL show up eventually. ❤️😘❤️The kids ate every bit of chicken marsala for dinner. They had pasta and I had zoodles. ❤️How’s that for a spark?! My friend took this picture tonight of lightning on top of Volcán Agua...the one that’s visible from my house. We watched the lightning show as we traveled home from Guatemala City where I found healthy options for date night! ❤️🥰This isn’t the way I planned to start my Friday 😩🤧🤒😷That’s not confusing at all. 😂😩Planning on eating a whole bag of “chips” today #eattherainbowTrying out new recipes, tonight was lightened butter chicken. I think the recipe needs a few more tweaks for my crew but 5/6 would eat again 😃Breakfast muffin with 11g of protein and 5g of fiber and it only takes 3 minutes
I used @newdebbie’s recipe for flax muffin in a mug as my guide but altered it to ingredients that I have on hand. I always add a bit of vanilla and I use cooking spray instead of butter.I overate a little bit at dinner but I’m not going to beat myself up about it because I made sure to MOVE. That’s probably why I was so hungry at dinner time!My kids had a pretty active day today too. They climbed Volcán Pacaya 🌋 You can see some lava in the background. They did such a great job as they hiked!! They’re 16, 13, and 11.Date night used to mean fried carbs. I didn’t miss them tonight 🥦🥕🌶🥒🥬I did briefly think about eating a stick f butter today. It is a rare luxury in this part of the world and I do miss the flavor but I would never actually eat a whole stick...no matter what my nutritional report from SparkPeople says 😂😆Lime sparkling water as my reward for drinking my 12 glasses of water todayBeautiful wonderful plain yogurt!! No added anything, just yogurt! Traditionally yogurt is over flavored and over sweetened here. Greek unsweetened yogurt recently became popular but it was about $5 a quart because it’s a luxury item. This is a much more reasonable $2. I’m so thankful!!Our bathroom floor is pretty but it’s a pain to keep clean. (And It never looks really clean. 😠) Today’s extra exercise was heavy cleaning due to scrubbing my arms off. 😂 🧽 🧼This is probably my favorite Guatemala style breakfast. Scrambled eggs, frijoles negros volteados (refried black beans), salsa brava and a little bit of crema. I normally add a fruit but I ate it all yesterday. 😂Black sand beach time with my kids, it’s black from the nearby volcanoes. We’ve spent a lot of time swimming and walking. (And I’m enjoying my vacation time treats in moderation.) Even fresh coconut is trackable on SparkPeople! I was worried that I wouldn’t be able to find it.Oh what a beautiful morning! Have a great day friends!Prettiest grapefruit! You’d never know by the discolored and spotted peel. ❤️We’re trying to focus on meal prep this week. I’ve chopped veggies, boiled eggs, cooked up a few batches of beans and made the kids their favorite instant oatmeal. ❤️ (We don’t have convenience foods available where we live, even precooked beans are hard to find sometimes.)I’m purposefully feeding “the mom” today. I’ve been neglecting myself in favor of easy access kid food so this morning I prepared my favorite huevos rancheros con frijoles with a drizzle of plain yogurt and an ounce of avocado.Splurging with cheese to go along with my egg white scramble with tomatoes, kale, and onions this morningFeeling under the weather today so my daughter made me this lovely avocado toast for breakfastIt’s been a tough week and that man of mine has been doing his best to make sure that I’m okay. Isn’t this such a pretty breakfast?! Butternut squash “home fries” and eggs exactly the way I love them. What a wonderful man ❤️30 pounds and 3% body fat lost! my husband took this picture of me tonight. A bit pudgy but betterMy weight loss has been a long hard journey with so many ups and down. #BeforeAndAfterHave a great Friday!I took a break from any extras (and unfortunately accountability) when the craziness of the coronavirus hit Central America. We’ve been under quarantine and curfew for almost a month now and I have gained ten pounds 😳 Time to get back on track and eat more mindfully again!
