Happy Anniversary to me for being on my journey for one year today and have lost a total of 53.6 lbs.....
Finally found a phto from 2017 ( I tended to NOT let anyone take my picture LOL ) so photo on left is July 2017~~Photo on right is me 53.6 pounds lighter in October 2018~~
There are very few days that I do NOT get 8 fruits and veggies daily. I most often have a fruit salad with Greek yoghurt for lunch and at supper with whatever protein .....I have a tray of roasted veggies....or a salad with aded veggies to the romaine lettuce...or a stir fry with loads of veggies added.
My roasted veggie pans from last night's supper....butternut squash in front.. ..from left to right in back pan.... Brussel sprouts...carrots...asperagus and french beans mixed together....also had some boiled turnip my hubby made ( he had most of the butternut squash ...I just took a serving out ) But all the rest were mine with my fish! Plus had 6 different cut up fruits in my fruit salad at lunch! LOVE my feggies!

My veggies ready to saute for my omlette ..all chopped up.... 1) carrots 2) peppers 3) two asperagus spears 4) spring onion 5) french beans 6) celery 7) red onion 8) two brussel sprouts Even though my day consists of 12 veggies total....they are not all full servings so counting them as 8 servings today

My rainbow fruit salad with Greek yogurt
Steak Salad for Supper Top Left~~carrot/celery/red onion /spring onion/green apple chopped~~ Top Right~~ added Romaine Lettuce and tossed~~ Bottom Left...my own salad dressing of 2tbsp each of Greek yogurt and FF Mayo with lemon rind and lemon juice and 1 pkt. of sweetner Bottom Right!!~~Salad tossed with dressing and cooked cut up steak~~

More carbs than usual for supper tonight but well within my calorie range as the burgers were 95% fat free ground chicken and the buns were Weight Maintenance ones for 90 calories per bun... Made burgers bulky with chopped carrot/celery/red onion/spring onion before cooking them. Had roasted veggies on the side! #eattherainbow
