Great way to start the day.
I can do this!
I was rained on during my morning run. It started at mile 2. Run for 7.22 miles and enjoyed every mile.
Feeling really proud.
Dinner - brown rice, a veggie burger and vegetable stir fry. I’ve been experimenting with veggie burgers and I absolutely love them.

This is how I spent my long Easter weekend.

Four days of serious hiking. If someone asked me to do this again in about a month, I would definitely do it. Absolutely worth every effort.
Today’s lunch: noodles, spiralized courgettes and carrots, red peppers and mushrooms. I don’t like noodles but the Veges made this an awesome meal. My son gave it a 10 out of 10. I’m vegan, my boys are not and it’s always great when they enjoy my vegan meals.
I woke up and went for a run, 8.29mi. Then I did a runtastic results workout which kicked my behind because I haven’t done them in quite a while. After my workout I was hit by an intense craving for vegetables. So I made some brown rice with roasted vegetables (beetroot, carrot, onions, broccoli, cauliflower, red and yellow pepper). I love it when I crave fruits and vegetables, and that usually happens after a good workout.
Started my Saturday with a 10.37 mi run.
