Been walking in famous Schwarzwalk woods, Black Forrest in English, in Germany this weekend. Beautiful nature.

Gluten free chocolate pie. Crust is shredded coconut and cocunut oil. Filling is fat free cottage cheese and 80% chocolate, eggs and a bit of stevia.

Dinner ready for the oven. Whole grain crust, home made low sodium sauce, light mozzarella and fresh basil.
It gets dark by 6,30 now. And trees are in autumn colours.

Brownies with amaretti biscuits and orange. Replaced most sugar by stevia and they came out great. Unfortunately they dissapeared faster than it took to bake them...

Jamaican sweet potato pudding with raisins, shredded coconut, coconut milk, sweetened with dates and of course our homegrown sweet potatoes and lots of spice. No eggs, no dairy.

It was a lovely sunny day. Cold but great to walk.
Bread for next week. Whole wheat spelt flower and very low sodium. Sometimes i add nuts or olives to have a bit of a change. Cost comes out to about quarter as in the shop.
Off to bed. Sleep well.
Gluten free chocolate cake for my cousins birthday. Almonds and walnuts and 70% chocolate.
Lunch today was pan grilled hokaido, red peppers, goat cheese with paprika, salt ans pepper. Delucious and only takes 10 minutes cooking.

Cake with apples and carob flour. Really moist, low fat, low sugar, lots of taste, easy to make. Perfect with a spoon of yoghurt or cream.

Finally after two weeks got a chance for a proper walk in lovely weather. Been working nonstop. My last day off was 5th February and i am really tired. Walking helps.
Ratatouille with pasta
Breakfast. Oats to go with mango, banana, raisins and cinnamon. Not my usual breakfast, but i have been up for hours, so its more like lunch time for my body.
A cup of 2% fat greek yoghurt with a couple tablespoons of sugar free home made red currant jam makes perfect Sunday dessert.
Another work weekend so no time to do much cooking. I made a pasta salad with grilled zucchini, tuna, feta cheese, lots of basil and before eating added fresh red peppers.

Zucchini is really growing well this year
Zucchini cake, entirely made with stevia and oatmeal used for the topping.

Persimmon and walnuts puding, about 110 calories per serving. Due to persimmon pulp needs very little butter and I used stevia as a sweetener.
