Today was Brian's birthday and he specifically asked me to make raisin bran muffins for breakfast. I was determined to make them healthier so I started substituting ingredients and ended up with a fantastic muffin. For those interested, here's the recipe:

Ann's Special Super Healthy Bran Muffins (LOL)

1 cup milk
1 cup bran

1 cup whole wheat flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 cup raisins

1/3 cup oil
3 Tbsp molasses
2 egg whites
1/4 cup brown sugar
1/2 tsp vanilla

Mix milk and bran and let stand 5 minutes. Add other ingredients. Mix well. Put into muffin cups, bake 400 for 20 minutes. Makes 12 muffins (150 calories each)

(I am one of these crazy bakers who just puts everything into the bowl and then mixes it together. Works for me!)

    I'm the same, throw it in a bowl and mix, somehow it all works out eh. :) Sounds like a delicious muffin. Love molasses in muffins.
