Tradition in Louisiana MADE HEALTHIER

Wednesday, August 26, 2009

HI FELLOW SPARKERS!

I JUST READ A FRIENDS BLOG, FABULOUS Nutritionist Visit, and it was AWESOME!
TO READ ABOUT OTHER PEOPLES SUCCESSES WITH SPARK CONFIRMS TO MYSELF
THAT I AM IN A PLACE I DEFINITELY WANT TO CONTINUE TO STAY IN!

I AM FROM LAKE CHARLES, LOUISIANA. I HAVE BEEN RAISED ON FOOD THAT REALLY
WAS NOT AS NUTRITIOUS AS IT SHOULD HAVE BEEN! NOW REALIZING ALL THE MISTAKES
I ENDURED IN MY LIFE UP TO THIS POINT WITH FOOD, I REALLY WOULD LIKE TO TEACH
MY GIRLS THAT FOOD IS ENERGY, FUEL FOR THE BODY! WE SHOULD EAT TO FUEL OUR BODIES
NOT GORGE OURSELVES WITH SUCH WONDERFUL, DELICIOUS LOUISIANA FOOD!
SUCH AS EATING A HUGE TASTY BOWL OF CHICKEN SAUSAGE OKRA GUMBO LOUISIANA STYLE IS SINFUL!
WITH A SIDE DISH OF POTATO SALAD!

HERE ARE A FEW LOUISIANA STYLE DISHES MADE CAJUN STYLE!
GUMBO
CHICKEN SAUSAGE
CHICKEN SAUSAGE OKRA
POTATO SALAD, SIDE DISH FOR THE GUMBO
JAMBALAYA
BOUDIN
POTATO SAUSAGE GRAVY(MY MOTHER-IN-LAW'S FAV DISH)
CRAWFISH ETOUFEE
FRIED SHRIMP, ALLIGATOR, RABBIT, CHICKEN

WHEN THESE DISHES ARE MADE THE CAJUN WAY, MAN OH MAN!
MY GRANDMOTHER, MOTHER, MOTHER-IN-LAW HAVE COOKED THESE DISHES MANY OF
TIMES AND GOD ALMIGHTY! THEY ARE DELICIOUSLY FULL OF FLAVOR! WITH IODIZED SALT BEING THE MAIN SEASONING! WHEN MY MOM GROCERY SHOPPED SALT WAS ALWAYS
ON HER LIST. AS I HAVE GOTTEN OLDER AND A MOM MYSELF WITH HEALTH PROBLEMS, MY
BODY HAD ENOUGH IODIZED SALT TO LAST AN ETERNITY FOR ME. SO I STARTED TO USE SEA SALT!
SEA SALT HAS SUCH A GREAT TASTE TO IT. NOT AS SALTY AND BITTER AS IODIZED, SO
YOU STILL HAVE THE TASTE OF SALT. AND FOR YOUR GUMBO NOT TO TASTE LIKE DISH
WATER, A GOOD HOMEMADE ROUX, AND SEA SALT WILL GIVE IT SOME PIZZAZ!

FOOD IS DEFINITELY A TRADITION HANDED DOWN FROM ONE GENERATION TO THE NEXT!
FOOD IS A WAY OF LIFE FOR PEOPLE IN LOUISIANA. BUT THOSE DISHES THAT OUR
GRANDMOTHER, MOTHER, MOTHER-IN-LAW, AND OURSELVES HAVE MADE WITH CAJUN FLARE CAN BE MADE HEALTHIER FOR US TO LIVE LONGER AND ENJOY THE TRADITIONAL WAYS OF LOUISIANA!

WE DEFINITELY HAVE TO MAKE THESE LOUISIANA DISHES MORE
BALANCED WITH GOOD NUTRITION! DON'T GIVE UP ON TRADITION, MAKE IT HEALTHIER! emoticon

I'm polish and you can't have a polish get together without a ton of food and most of it is not super healthy. I've had to adapt alot of my childhood favorites so that I can have them more often.

I think we all have to adapt our traditional recipes to accommodate the healthier life style we want for ourselves today. emoticon but smart.

Hello Fellow Lake Charlie...My mom and mother in law also cooked fantastic gumbo, etoufee, fricasse and all the other Cajun foods. I had to learn how not to cook their way...but yet cook good food. Afterall, I had to please my Cajun man. So I have learned to that you don't have to download all the salt in Big Lake to make a good gravy, gumbo or soup. Just use seasonings like onions, garlic, bell pepper, celery, green onions, and a little dab of file.
Mais, chere, sa bon...even if I do say so myself.
