DH found this recipe in a farm paper that we received. I was reluctant to try it, because at first glance I thought any potato soup would have quite a few calories. I did alter the original a bit by adding a bit less milk, flour and salt and added a bit more water . After entering everything into the recipe nutrition calculator I was surprised it had only 101.5 calories per serving. We had it for supper the other night and it was great! I don't think you can freeze it because of the milk and potatoes, but depending how many your feeding, you can have leftovers for the next day.

Pepper and Potato Soup
6 cups water
2 boulion cubes
1/4 cup rice
2 shredded potatoes
2 shredded carrots
2 stalks celery, chopped
2 medium onions, chopped
1 green pepper, chopped
1/3 cup flour
1 tsp salt
1/2 tsp pepper
1/4 tsp paprika
1.5 cup water
4 cups 1% milk
Optional: sprinkle of imitation Bacon Bits and low fat cheese (Mozzarella)

Mix the first 8 ingredients in a large pot. Bring to a gentle boil, cover and let simmer for approximately 20 min.
Mix flour, salt, pepper, paprika and second part water together until smooth, then stir into the simmering mixture. Add milk and stir to bring to a boil. Adjust the seasonings to taste.
Makes approximately 12 cups. Sprinkle with bacon bits and a half Tbsp of cheese in each bowl before serving.
