Recipe for Yellow Split Pea Soup with Sweet Potatoes, Mustard Greens & Mushrooms

A friend showed an interest in this recipe so I decided to post it so everyone can try it if they want to! I got it off from the Simply Recipes site, it was actually in a comment for a Mustard Greens recipe. I used vegetable broth so my vegetarian daughter could also eat it and I added the mushrooms to it.

Yellow Split Pea Soup with Sweet Potatoes, Mustard Greens & Mushrooms

2 T Olive Oil
1 large onion – chopped

4 clove garlic – minced
2 t cumin

2 c dried yellow split peas
5 c water
4 c lo-salt chicken or vegetable broth

3 ripe plum tomatoes – seeded, peeled, diced
1 med. Sweet potato – peeled and cubed
½ lb. Mustard greens – coarsely chopped
8 oz. sliced mushrooms

1. Heat olive oil over medium heat, add onion, cook 4 to 5 minutes, until onion is soft. Add garlic and cumin, cook one minute more. Add split peas, water and broth, bring to a boil, reduce to simmer, cook about 1 hour until peas have broken down.

2. Add tomatoes, sweet potatoes and mustard greens, simmer until vegetables are tender – approx. 25 minutes. Season as desired with salt and pepper.

10 - 1 Cup servings – 215 cal. 12 g. protein 3 g fat

As I said, I added the mushrooms and used veggie broth.... I also only used 1 Tbl. of Olive Oil. Also, after step #1, I put the whole thing into a crock pot and let the vegetables cook on high for a few hours... they were probably over cooked so next time I will cook on low.

I'm also going to try doing it right in the crock pot from the beginning.... but wait until we get home at the end of the day to put in the veggies from step #2, I think they would cook fine in an hour, on low, which is about how long it takes everyone to get settled and ready to eat!

When I entered the ingredients in our recipe calculator I came up with approx. 150 calories per cup.

If anyone gives this a try and makes any changes, please let me know what you did and how it turned out. I need lots of help with intensifying flavors with spices. I'm hopeless when it comes to spices, I have no idea which ones to use unless they are in the recipe.

We loved this soup...well... 3 out of 4 of us loved this soup...the odd one out has hated everything I've cooked since trying to become healthier..lol! Hope you enjoy!
