I'm still struggling to get back on track, but I'm not giving up! Gearing up for finals and hopefully (pending interview results) a new summer job. It will be nice to have a normal 9-5 schedule again. When things are predictable it's so much easier to structure my eating habits in a healthy way. The summer is sort of like my reset button after two semesters and all of their destructive sway.

I've also got my garden all set up with broccoli, brussel sprouts, tomatoes and a few different herbs! Harvesting and cooking up my own veggies is incredibly fulfilling and just that much more delicious. I only have a balcony to use for gardening space. If you are in a similar predicament, the Earth Boxes work wonders and are so easy to set up!

P.S. If you're Vegan, Whole Foods and Wegman's have just started carrying a new Vegan shredded cheese substitute called Daiya. It's the best that I've tried so far! We've used it for pizza, lasagna, tacos and even macaroni and cheese. It's great for that occasional cheesy fix.

www.earthbox.com has a list of dealers or you can order it directly from them. I've seen them at places like Lowes, Home Depot, even some grocery stores. My mom is a Home Shopping Network fanatic, which is where mine came from.
