A yummy recipe to get the veggies in -

Normandy Vegetable Soup

1/4 tsp Cayenne Pepper
1/2 tsp Cumin
2 Tbl Seasame Oil
1 Tbl pressed Garlic
4 C Chicken Broth (Gluten Free)
9 C (1 Bag) Normandy Blend Vegetables (or substitute)
8 oz can Diced Tomatoes
1 Red Pepper

In Crockpot (or stock pot) add all ingredients and cook 30-40 min on high until done
