I tried something a little different.

For a while now I've been thinking: I want to make a home-made pizza. My mom used to make them from time to time and I wanted to do it. Well, at the grocery store I couldn't find the pizza Jiffy mix I remember mom using (and it was getting late, the store was closing, and Baby had been great but I was just waiting for her to be "ALL DONE" with shopping) so I found a Pillsbury ready-made crust and grabbed that. Grabbed some cheese and a jar of Prego spaghetti sauce. Why, you ask? Because I wasn't sure what pizza sauce I would like (I am still VERY fussy about any crunchy little onion pieces in my tomato sauce--YUCK!) and I know I like this so I used it. So tonight I spread out the dough, put on some sauce, put on some diced tomatoes and some pre-cooked broccoli and Voila! Home-made pizza. I entered it into the recipe calculator tonight. It's rather low on fiber, and certainly not a low-cal food. Of course, I could cut back on the cheese, use lowfat cheese, and I could and will look around for other crust options. This was great as far as being quick and easy, but there may be something else out there I like even better. I'm just kind of excited to have relinked with a favored family memory, as well as found a way to sometimes enjoy a favorite food but be in control of the ingredients.

    What wonderful ideas! The things I usually have done for homemade pizza are falling by the wayside as I try to focus on my counts better. These are all great ideas! I love to brown extra lean ground beef add frozen 3 pepper and onion blend cook until the veggies are caramelized then add mushrooms and possibly a few olives, Italian seasoning and tomato sauce. I cook it down until the flavors blend and put it on my crust. I am going to try the English Muffins next time for a mini pizza. I am even willing to do without the beef! emoticon Great job in bringing back a comfort food and exploring the culinary world! emoticon

    Homemade pizza is so good! I get the pre-baked crusts (so much easier), but you can also use pita or naan bread as crusts. Also, check out sparkrecipes for some crust recipes!! The other night I made a shredded chicken pizza with green and red peppers and mushrooms, with shredded mozzarella! So good! (shredded chicken = boneless skinless chicken breast in the crockpot with a small can of no fat chicken broth and water to cover the chicken, then some minced garlic and other fave spices, turn crock pot to high for 3 hours, then low for at least 3 more hours. let cool in broth, then when you take it out, it basically shreds itself! and you can use it immediately or bag it and freeze it - made cheesy chicken enchiladas the other night and last night used more shredded chicken with bbq sauce and buns for some delicious chicken sandwiches!)

    Yum! Sounds great! If you like thin crust pizza, I really recommend trying an Appian Way Pizza mixes as an occaisional treat. They come in a box containing the crust mix and a tangy, slightly sweet pizza sauce with no onions--crunchy or otherwise--for about $1.69 and the so-called "regular crust" is really a crispy thin crust unless you use a super-small pan. It's the only prepackaged type of pizza I've found that I liked. Great with a handful of 2% mozzerella and tons of veggies!

    That sounds like fun! My mom used to help us make little pizzas on English muffins... plain tomato paste for a base, a little cheese, maybe one or two pepperoni or some cut up lunchmeat ham. I'll have to make those again soon! Thanks for the smile and inspiration.

    As for crust ideas, sorry but I'm not very bake-y. I'd use a slice of french bread if it were up to me or a Boboli crust, which I imagine is not the best option! Have you checked the back of a Bisquick box?

    I really enjoy homemade pizza too! I actually just picked up some turkey pepperoni by Hormel today, although I haven't tried it yet. I make my homemade pizza on english muffins. I found ones that have 8 grams of fiber! I end up slicing the english muffin open and have two 'mini' pizzas and it works out pretty well. I also found that when I use mozzarella slices on my pizza that it tastes better than the shredded cheese--I have no idea why. When I make a whole pizza, I use the Boboli wheat crust, found in the pizza ingredient section at the store. That works pretty well too. Good luck!
