Cooking up a storm

Today is my big cooking day. In the summer I choose one day a week to get my big cooking done so it does not heat up the house every day.
I'm experamenting with chicken and it looks good. I took 3 chichen breast deboned and took the fat and skin off then cut it into bite size pieces. Took some sun dried tomatoes ( patted off the oil it came in ), some roasted red peppers, cut them into smaller pieces Ohand a clove of garlic (minced) . Saulte' the chicken in olive oil and added the peppers and dried tomatoes. I also added a can of artichoke hearts that I drained and rinsed. I then seasoned with a little salt & pepper and zested a lime ( I was out of lemon) over the chicken mix then added the juice. We'll see how it comes out tonight.
I'm also cooking a pork tenderloin and a turkey roast.
Now to start cooking on my exercise while I'm waiting for the oven timer. See y'all later.
