Finally, I feel like I have some energy. It's not boundless, but definitely a huge improvement over the past few weeks. And I can actually taste my coffee today. *insert rolling eyes smilie* Yesterday, I made coffee and felt that I HAD to drink it since I'd already entered it into my nutrition tracker - I need to not do that. It's dumb. On the flip side, though...because I'm tracking every.stinkin.thing. that goes in my chops, it kept my cheese habit in check. (I just realized that on a typical day I eat an ounce or two of cheese every couple hours!!! The excess is what gets me.)
I ate really well yesterday and the sherry braised short ribs I made were TO DIE FOR...and low carb to boot. Would have been fantastic with some oven roasted carrots, so I'll definitely do that next time. Planning on more of the same good eating today. Should be easier today, as my mind will be with the boys while we home school (as opposed to bored, wandering, munchy mind that I get on the weekends). I didn't make the French onion soup yesterday, so I'll probably do it today, though I don't have any gruyere to top it with...and I really don't feel like breaking my hermit streak and actually...gasp...go out in public.
I've been watching Food Wishes on YouTube all weekend (where I got my short ribs recipe). The guy is hysterical. "Don't drink cooking sherry. If you're drinking cooking sherry, you've hit rock bottom." It's the tone of voice that I really love, though. Definitely worth checking out.
