From time to time I think all day about what I should make for dinner when I get home and most often when those days hit I end up making bad decisions because I think of so many different things I can't make up my mind. So seeing as how it nearly derailed me last night (but didn't! HA) and I've already started the "oh crap... what's for dinner" bit today, I decided to:
A. DECIDE what I am making then
B. Blog it so I don't have to question it later....
Dinner tonight will be:
2 cups of fresh spinach with red onion and french dressing (my easy salad)
boneless skinless grilled chicken breast with 1/2 cup of yellow rice (mexi-style) all topped with 1 cup of my homemade salsa and taco cheese.
Keeps me well within my nutritional goals, its easy and yummy and something my husband and kid will eat! YAY!
