Planning Ahead – Healthy Eating

Cooking on the weekends helps me make healthier food choices all week long. This winter I have enjoyed making homemade soups for lunches. I make soup on the weekends. My husband and I enjoy some for dinner and then I pack the leftovers into lunch containers. Making lunches is easy in the morning. I pack soup & salad with a small slice of bread for lunch and also some fruit & nuts for a snack in the afternoon. Making sure I have a bag packed with plenty of healthy options keeps me away from vending machines and other temptations.

The weather was bad today, so I stayed indoors and made soup, bread, pesto & veggie burgers. I freeze the extra burgers for quick meals. They help me stay on track when I am too tired to cook something healthy. Sure, it takes some time to cook on the weekends, but it makes the week so much easier! Usually I just make one recipe, but I got a little carried away today!

    One of my favorite things to do is cook some lentils while I'm showering and getting ready in the morning. I love lentils for lunch with a piece of bread or an apple.

    When I cook dinner I usually save some out and put it in the fridge before we eat. Then I'm certain I have leftovers for lunch the next day.

    Veggie burgers sound good. I've never made them myself.
