Odd version of mashed potatoes

A couple of weeks ago in the cafeteria at work, one of the dietitians was serving samples of what looked to be kinda like mashed potatoes but not quite. They were really good too. Turns out it was pureed cooked cauliflower with garlic, kosher salt and pepper, light butter spray, skim milk and a little potato flakes. I just made some tonight to experiment (and see if my other half liked them) and left off the butter spray and potato flakes. It was pretty good and a good way to get some veggies in. My other half didn't like them, so next time I can add a little wasabi powder to spunk it up a bit. I also got a bunch of Fuji apples and big bag of clementines for some healthy snacking. Anyway...now I've got something to do with the cauliflower in my garden when it matures... Yippee!
