Quinoa - YUM! What took me so long?

I worked in the yard all day and didn’t get to the grocery store. I wanted to make something healthy for supper that I could take for lunch at work tomorrow. I decided to try the quinoa that I had purchased recently. For the most part, I followed the Quinoa Primavera recipe on Spark Recipes. I didn’t have peppers, but I added some chopped mushrooms and a bit of broccoli and spinach from our garden. The food turned out so amazing, that I’m wondering why haven’t I used quinoa before? The recipe was quick, easy & delicious! I carefully saved some for lunch and my husband and I each had a serving. I wanted to have more, but he had also packed some for lunch tomorrow. This was a success at our house!
