My hour-long drive home from work normally consists of planning dinner for the night. Last night I wasn't really in the mood to do a on of cooking, but also not in the mood to spend money to eat out. I ran over a list of items that we had in the house:
- eggs, tortillas, lettuce, a tomato, half a bag of frozen spinach and a block of questionable cheese...
I decided to create a new favorite recipe from the items laying around the house & some last minute things picked up at the store on the way home. Check out the recipe for more detailed information:
Things I got from the store (about $10, but then I got beer $3 & some mini ice cream sandwiches $3 so my total was $16)
- fake chorizo (much lower in fat than regular chorizo & vegetarian!) an onion, package of mushrooms, can of re-fried black beans and a jar of salsa (I was also going to get avocados but they were too ripe)
Breakfast Tacos (you could also do without the tortillas to reduce calories) with soy-rizo sautayed with onion, mushrooms and spinach (a frozen package I found in the freezer) and 4 eggs scrambled. With some added cheese, warmed up black refried beans, diced tomatoes and lettuce on-top these were tasty & low in calorie too! This recipe makes 4-6 servings, depending on how big your servings are. At 4 servings for this recipe it is about 300 cal without the tortillas. I had about ¼ of everything and my boyfriend ate more than I did and we still have a ton of leftovers today!
I forgot to take a picture, but these are definitely worth trying if you want something super fast, easy and delicious! I added some extra hot sauce and cayenne pepper for some heat, but even a few tablespoons of salsa would be a great addition.
We capped off dinner with 2 mini ice cream sandwiches from Trader Joes. I am feeling great about cooking healthier meals and sharing then with my boyfriend who is a HUGE meat eater, but still loved these tacos!
