Everyday Paleo Apple Muffins -- AWESOME AWESOMENESS!

We woke late and made our planned and anticipated muffins this morning. WHAT AN EASY AND DELICIOUS TREAT!

My tips:
- VERY EASY to involve your child in the preparing of it. Make 'em do the work.
- Heat the coconut oil in your little saute pan to get the 1/4 cup, of course. I discovered that coconut oil doesn't melt in the microwave, at least not fast. Better to heat it a bit.
- Having frozen ripe bananas on hand is a great asset! When bananas get too ripe, I peel them and put them in ziplock bags for the deep-freeze. Taking them out and thawing however you want makes for a wonderful cooking banana.
- Making your own almond meal is incredibly easy with a food processor. We had a beautiful fine meal from our own efforts. We ran out of the Trader Joe's almond meal and had to scramble to get the rest needed, and this meal was even NICER. Make yer own.

Savannah and I brought them to the gym where I got to do MovNat last week. They really liked the muffins!

My daughter... she and I are so bonding over all this neat food. She's at her dad's now. The wind is a bit out of my sails, but when she comesssss back... PORK CHOPS WITH THE ROOT VEGETABLES RECIPE in the book!

    Recipe sounds good! I'm gonna see if I can find it on line. The non-primals in my house are starting to whine for something "more familiar" so hopefully I can get some yummy (primal) muffins by them!

    haha, my attempt to make them this morning didn't happen (ran out of time before I had to take a trip)... so hopefully tomorrow... maybe after church, since I'm not too likely to wake up early. ;)
