Eggplant? Yes, please.

So for some reason I got curious about eggplant. Never tried one, never cared to try one, and then I got curious. I'd seen them in the store and thought they looked interesting. I mean, it's purple, so it has to be good. I went grocery shopping today and planned on getting tomatoes and an eggplant to try a grilled eggplant recipe I found. Really simple, slice the eggplant, add salt and pepper, grill. Take the grilled slices and cover with a slice of tomato and a mix of garlic, mayo, and Parmesan cheese. The store didn't have eggplants. That really got me going. I mean, it's near 90 so I can't really leave my salad fixings and meat in the car to go to a second grocery store and I didn't want to go home, unload, and head back out. So I put the perishables in the trunk, put the A/C on full blast to the second store, park close, and went as fast as I could to get my eggplant and tomatoes. As soon as I got back to the car I checked my salad veggies and was happy to see they were fine.

So I rush home with my prize. I get the groceries put away, get the oven going for the pork roast, dig out my George Foreman, and start slicing. I don't know what I was expecting, but it was delicious. Kinda creamy and no real need for the extras. Spices and the olive oil spray and voila! Plus you get a lot for a little calorie wise. Next I found a pizza that uses eggplant slices as the crust on SP. Didn't try that because I didn't understand the slicing directions, but I think it just needs the round eggplant. My next new recipe.

    Oh NFSISTER, I am so jealous! Your description of the eggplant is almost more than I can handle.

    You see, eggplant is the one food, that I know of, that I am terribly allergic to. It's crazy, I know. It gives me hives and affects my breathing.

    I recently joined a CSA. In my first box last week, there was a beautiful Japanese eggplant. It was that same lovely deep purple but shaped like a long zucchini.

    I had to give it to my mom. She told me later that it was delicious. I'm glad someone was able to enjoy it.

    Congrats on finding a new healthy veggie! We need all that we can get. emoticon

    I have though of trying Egg planet several time but it veggie has yet to get a trip to the check out stand emoticon I like the idea of using George Formann o grill it might have to get brave and try it will let you know how it turns out emoticon

    Glad you jumped in and tried something new! I've never had eggplant but with my digestive issues I'm too afraid to buy it just for me to try it. SP has a ridiculous number of recipes that cover any ingredient you can imagine. So what other new foods have you thought about trying? Maybe you can go to the grocery store that has more options (or better yet hit up a local farmer's market) and just look at what they have. Pick something that's on sale that you haven't had before, then bring it home and search for it on sparkrecipes.

    I love eggplant. One market in our area had all different kinds of
    egg plant, other than the purple last year. I actually like some of
    the others much better than the purple. This year, I haven't
    found any other than the purple.

    I take it, spray with olive oil, salt and pepper, and throw it on the grill. Almost an entree to itself.

    The same works for zucchini. Enjoyed it enough to put two eggplants into my garden this year.
