I must dedicate this post to rice. Why? Because I haven't eating rice in.....ages. Months, maybe all year, strictly because I'm finding cutting carbs reasonably has been making some good changes to my body and I haaa-ate counting calories. It's like, writing about having an "O" while you're actually having one. Ruins all the sexy fun. So I just sort of eat less in general and tend towards less carbs. Nothing crazy because I'm not that consistent, but I'm halfway to goal. But last night, I had a yummy simple Mediterranean dinner of shrimp kebob, greek salad, and ate every scrap of extra long grain rice which was the perfect consistency and had a slight smoky flavor from the bbq. My happiness was indescribable. And so, I offer up this worship to that full serving of rice I freely allowed myself to eat last night. Thank you, thank you, you Greek masters of rice cooking. If you're going to cheat, make it a good one.
