CHICKEN SALAD

I had some chicken tenders and breast that I had cooked yesterday in the crock pot with taco seasoning, alot of juice cooked out and left the meat very dry. So I chopped it up, added non-fat greek yogurt for binding agent instead of Helman's Mayo (which I am addicted to). Then I had a couple of boiled eggs hanging out....in they went. I also added celery and about a cup of my sweet pickles chopped up. I also added about a tbsp of prepared mustard and salt and pepper to taste. Of course I did not measure anything. It depends on how much left over chicken you have. Play with it and add what you like. I like onions in it but normally don't put it in salads that I am going to eat over a couple of days because the onions tend to take over, if you know what I mean.

    I am thinking alittle curry powder and some el dante broccoli would be good in this too. If you do that I would leave out the pickles.

    Saralee, I put them in frozen with about a cup of chicken broth. I am a dark meat woman and love the thighs but the difference in calories and fat are too different for me to eat them right now as I am just getting started. Maybe after I have gotten down alittle more, or maybe on C3 I will use them. The pickles are what make this salad.

    Hmm.. great idea! I haven't tried any variation of chicken salad - might have to give this a whirl.

    I pour salsa over my chicken breast in the crock pot.. seems to help with the dryness - even put them in frozen (the frozen-separately kind) and that helps. They tend to shred & fall apart more than I like, and another 17dd friend recommended using thighs! OMGoodness did they come out great! They just fell apart and so moist. I trimmed ALL visible extra fat first.

    I really love taco seasoning & salsa a lot on this plan.
