I'm super pumped about a recipe I just found. I love rice and beans, but know I'm torturing my husband with the same ol' same ol' R&B all the time.

Orange Pineapple Brown Rice and Beans. Sounds fantastic!
My normal go-to Rice and Beans is:
1 cup uncooked rice (always brown for me)
1 can beans, drained (black, kidney, pinto, pick any beans!)
1 can crushed/diced tomatoes or tomato sauce
seasonings, veggies (onions and green/red/yellow peppers work great), cheese, hot sauce, salsa, etc
If I double the recipe, I'll add a can of drained and rinsed corn. I don't like to add too much corn, as it doesn't digest well.
I plan to make the new recipe this evening, after my run. There was an egg in my breakfast muffins and some cheese on my (R&B) lunch, so today looks like a 100% vegetarian day. So was Tuesday, actually. I had a PB&J for dinner as I was in a hurry.
Not that I plan to go 100% vegetarian, but I'm going to (try to) decrease meat days. I've done this in the past, but gotten a little bit away from it. I haven't bought tofu in AGES.
Running has been going.. just ok. My knees have been bothering me quite a bit. I've backed off some, done more on the elliptical, switched to new shoes, and will be on the towpath more this week (now that we've FINALLY thawed). I've never gone so long without running on the towpath. I think I ran a couple times on the path around Christmas, but nada since the first of the year. Well, once, but we tried with about 8-10" of snow.. so that 13 miles was like the effort of 20. Seriously.
