Made a new recipe that was AWESOME! It is Paleo Pad Thai, and here's the link:


I did not use chicken thighs; I used a small chicken breast. I did not use spaghetti squash, I used a 12-oz package of angel hair cabbage. I also upped the amount of onion and snow peas because more veggies means more food!

It made a huge pan full; my hubby had half, I had 1/4, and was going to save the other 1/4 for lunch...but someone went back for seconds and I didn't have the heart to tell him HANDS OFF!


It was easy to make because you make the sauce, cook the chicken, and steam the cabbage ahead of time. Then it's basically just sautee everything together in the sauce. It was totally YUM and I didn't miss the noodles at all!

It is 6:15 AM and we are getting ready to leave to walk on the city trail. *sigh* it is already 70 degrees out. Going to be another steamy one. Happy Sunday, Sparkpeeps!
