scale flucuation and taste changes

Saw the scale go down to 143- then up to 145-then back down to 143 a few times this week. You don't have to remind me, I know you're only supposed to weigh yourself once a week but, oh well, this is what I do sometimes.
I've noticed this happen before and usually by the next week it stays at the lower number.
Hope that is the case this time too.
Been loosely following the Whole 30 diet, I say loosely because I can't seem to leave ALL the carbs out. I get too tired and craving and end up eating something carb. My goal is to actually do 30 days of the reset but I have noticed a change in my taste preference. Desserts or candy will taste too sweet if I try a little bit. Fried foods are not appealing and "what veggie" is the first thing I think of for meals. All good changes that I feel I can stick with-- the big challenge for me is the carbs.
