Cooking Peace Corps style.

I was fortunate to find an apartment in my town while serving in the Peace Corps. Problem was, it had no refrigerator or stove. A co-worker lent me a small fridge and I just went out and bought a two burner counter top. Unfortunately, I can only use one burner at a time since using both causes it to trip a fuse. When I cooked spaghetti the other night, it took me over an hour and a half since it takes sooooooooooo long to heat things. I did cook enough for a few days so now I just have to re-heat.

Here's what it looks like:

When I served in the Peace Corps the last time, I didn't have a refrigerator but I had a stove. In the winter, I'd keep my butter and leftovers out on the window sill. No doing that in Costa Rica in this heat!

I can take consolation though in that even though it takes a long time to cook things, in Peace Corps you have the time.
