Mini Goal

Our blog challenge on the 100+ First Steps team is to write about our next mini-goal and a couple of things we can do to reach that goal.

My mini goal is to lose 15 lbs by August. I'm scheduled to go back to the dr. in August and I want him to be proud of me. I've accomplished a lot since our last visit by increasing my steps and walking a 5K. Now, I want him to see the weight loss as well. Plus, I want my A1C to go down.

I will be continuing increasing my steps each month. I'm currently doing at least 7,000 steps each day. I do more on the weekend. I need to track my food every day. I started back today. I need to incorporate more veggies in my diet. I do great with fruit, but it's the veggies I need help with. So, I'm eating more salads. I love roasted veggies. In the evening, I will start roasting veggies to eat with my dinner.

    I am sure you can do it!!! just think that all those veggies are nearly no calories .. and you can eat a whole bowl full. of course that really depends on how you fix them.. we roast a lot of veggies either in the oven or on the BBQ I will buy a whole head of Cauliflower just for me emoticon steam it with some Mrs. Dash or Lemon Pepper and I am a happy camper LOL same with all my veggies.. hubby loves them too but some have to be drowned in holindaise sauce. SP has a great roasted Asperagus recipe I made it last week and could of eaten more! I love a few oz of chicken on my salad.. or thin sliced beef.. I use salsa as a dressing and it is so yummy.

    I cut up veggies and keep them on hand so when I have the urge to snack they are there....ready and I can resist the cookies, nuts or chips...

    I am lucky cuz I love veggies ...

    TEXXLADY, I like to roast carrots, turnips, potatoes, broccoli, and cauliflower. I just sprinkle a little olive oil on them and sprinkle a little kosher salt or sea salt on them.

    I, too, eat more fruit than vegetables, mainly because my dh is not much of a vegetable or salad eater. When I suggest a salad, he always adds "just a small one for me." I discovered, when having over dinner guests, and I serve the salad before the main meal, he will eat it all. When we are alone, I usually just serve the salad along the meal, and he will always just eat 'some', asking me if I want to finish his salad. I hope with summer coming, and barbequing more, we can bbq a mixture of vegetables. This is so easy: just clean, cut up, add a little Italian dressing, salt and pepper, mix and grill (preferably in a bbq grill pan).
    You have a great plan and I hope you can stick to it.

    That's a great plan you have and you have really become very active which will make your check up all the better..I am doing the same thing and have my first check up in the middle of June,its exciting to know were headed the right direction..Good job keep it up emoticon

    Lanie-- Way to go! Veggies should be easier now that spring has arrived! Salads with every meal help me! I also like sliced peppers and celebry sticks with hummus. You can shed those 15 pounds and make yourself proud!

    Vegetables have been tough for me, too. (Fruits were easy!) One way I've found to get more vegetables is with a roll-up--either a slightly steamed swiss chard leaf, collard greens, or, more manageable in the beginning--a leaf or two of Romain lettuce. I put a smear of humuus and slices of other vegetables on the spread out leaf, roll it up and eat it like a wrap.
