I kept myself busy in the kitchen today to keep my mind off missing our college kid. Tomorrow I'll be back in the crazy rush of work, but having too much time on my hands today was going to tempt me into a self-pity funk.
So I de-boned, de-skinned, and de-fatted a Costco rotisserie chicken for protein to top off lunch salads for the week. I then boiled the carcass for a long while to make a rice congee; I added some fresh corn for texture. I've found congee is a good way for me to get my rice fix in a carb efficient way - a half cup of uncooked jasmine rice cooked in the chicken broth long enough eventually makes 4 generous servings of thick congee. I had one serving for lunch and froze the other three.
Then I made a big vat of chicken tikka masala using fresh chicken tenderloins we got at Costco as well. My recipe called for heavy cream, but I found fat-free half-and-half at the grocery and the dish turned out fine - definitely not as rich but still flavorful, and the kid gave me a big thumbs up. I made enough to feed the family three dinners, so saved one portion for tomorrow and will freeze the other two. I'll just add a big salad for all and some roti for the hub and kid, and dinner will be taken care of.
Seeing my stack of lunches in the fridge and stacks of frozen homemade meals in the freezer felt satisfying; something got done today. Now I need to finish preparing for a work presentation tomorrow morning before going to bed; cooking was more fun!
