For months I was cooking separately for myself and the family since on PSMF I was allowed only lean meats and small servings of low-carb veggies, and the family needed a more balanced diet. Then I had to learn to maintain and carb myself back up, and went a little crazy on the snack food carbs that I missed so much. And then I gained some weight back, and now I am back to figuring out how to have balanced meals without going overboard on the carbs.

This week was a little challenging because we made a big lasagna on Monday, and instead of freezing it, I have been re-heating leftovers for dinners. Tonight the kid and hub had healthy servings of lasagna, meatballs, and green beans. I had the beans, a second veggie, some de-skinned roast chicken breast, and half a cup of lasagna. It's too hard to deny myself the lasagna when I can smell it on everyone's plate every night. So I serve myself 1/3 of what the rest of the family is getting, and I make that half cup of lasagna last a long time by taking small bites and chewing slooooooowly.

This is the fourth and last night of lasagna, thank goodness. I love anything with melted cheese, and every dinner I've been fighting the temptation to shovel a pile of that gooey pasta in.

    Oh yeah--lasagna is so hard to resist! My husband doesn't like it, so I don't make it often, but when I do make it, I suffer a similar days-long temptation.

    On my recent trip to the US, I visited my sister, and she made a scrumptious what she called "Mexican lasagna," with a distinctively taco mix taste. It had beans and ground meat, and looked really easy to make. Uh oh. Didn't mean to go into such detail, but you are out of danger because your lasagna is all gone, and I know you will keep on doing a great job at the dinner table and in the too-long after-dinner hours! Hang in there, my dear!
