I discovered another new recipe, another beauty! Its not a recipe so much as a formula or technique. Look away if you're carb phobic. I'd heard about this from a vegan YouTuber named "Potato Strong". I watched his video several times and couldn't believe that it could ever work, but I had to try. Oh yes, it works!
You can either grate up a quantity of potatoes or use thawed frozen potato shreds. This time I opted for the thawed shreds since it's what I had.
Place your shredded potatoes in a clean tea towel and squeeze and wring out as much liquid as you possibly can.
Next heat up a panini press to about 400 degress. [I have a Cuisinart griddle/press; the Potato Strong guy says you can use a George Forman grill or you can heat it in the oven]
I sprayed the grill plates with a bit of oil, took a deep breath and packed the potato shreds on there, and closed it up and pressed it down. I was sure it was going to be a horrible sticky mess. The instructions were to let it cook away in there for 20 minutes so I set the timer and walked away.
And the miracle--it didn't stick!
So I had this big sheet of lovely potato bliss--
Now to fill the "omelette"--I just worked with what i already had: peppers, onions, mushrooms, broccoli, and fresh chopped tomato.
Then I folded it over and it was huge!!! That's okay, we love leftovers; we can even reheat it in the panini press. This photo is after I cut off a serving.
This is what it looked like when I plated it up for my dinner. This dish didn't have any salt in it, so I salted the top, indulged my love for ketchup here, and topped it with a little chopped avocado. Lovely simple food and potatoes are always good and so comforting. Try this!
