Day 2 of the new year

Today started off pretty much like yesterday. Woke up a little before 10, had some coffee and left over steel cut oats with cranberry sauce. For lunch had leftover salted cod consoada. I still have one more serving of it left so probably will have that for lunch tomorrow, not really freezable and I don't want it turning on me and having to throw it away. I just hate it when I have to throw food out.
I ended up having to eat some cookies this afternoon. I wasn't feeling well, was feeling a bit shakey and was able to check my blood sugar with my mother's test kit, it was 74 not even an hour after eating lunch. Looked it up and for a normal person up to 2 hours after they eat their sugar should be between 80-140. I really hate when my sugar dips down like that and it's usually when I just have coffee, which irks me because today I actually ate breakfast and had coffee yesterday and had no problems. Thankfully I didn't give away my oatmeal raising and peppermint mocha crinkle cookies I had made for xmas. Wasn't really on planning on having them today but oh well, didn't have any orange juice to bring my sugar up to a normal range.
Dinner is where my culinary day got super exciting, made gnocchi!!! Gnocchi from left over mashed potatoes, it's the sole reason why you make more mashed potatoes that you can possibly need...GNOCCHI!!!! Made it with white whole wheat flour instead of all purpose and could not tell. Sauteed up some onions and garlic in some of the fat drippings from the xmas ham and chopped up 8 oz of the ham and made a bechamel sauce mainly with milk and just a little heavy cream that I have left from the holidays.
I still have so much left but I'm determined to turn it into new dishes and use it all up before I have to throw it out, really if it weren't just myself and my mother I wouldn't have to worry about wasting food so much.
I walked Hally my dog around the neighborhood after dinner, even though I had dinner late and it was already dark out. I figure since I live in a subdivision it's safer to walk at night rather than on a normal street, since really the only cars driving belong to people who live here. Well that's my theory. Also it's supposed to rain all day tomorrow so I wanted to make sure I got a walk in with her.
So I'm actually excited about the rain tomorrow and that it's gonna be a high of 59! YEAH!!! It's gonna feel like a cool rainy fall day to me, and gives me the ability to make warming wintery dishes. I'm originally from Massachusetts and living right now in Orlando Florida and still haven't gotten used to the heat and I miss the cold and the snow and seasons!
