So I am already falling behind with my goals for the year. I'm not quite making those 3 walks a week and I've haven't been keeping up with my minimum of one blog a week. One of the reasons why I wanted to push myself to blog is to also document my eating habits through pics.

Lets see if I can completely recall those meals I've missed with these lost blogs.
There was a homemade ham and pineapple pizza, just olive oil on the crust no sauce. The crust was something I had made a while ago and had in the freezer.
Then there was my take on quiche lorraine, made with leftover ham, onion, and left over cheddar cheese. I made the crust with whole wheat flour, shortening, water, salt. Yes people there was fat in there, fat is important when making a crust, it helps make it flakey. But I'm wondering if I could freeze avocado and use that instead....hmmmm maybe.
Friday of last week I had pan fried a filet of tilapia with just some olive oil, salt and pepper and served it with a hash of onion, pepper, and potato.
Saturday night I finished up the leftover ham and made that into a ham potato hash and topped it with 2 fried eggs.
This past Monday I took what I had left over of my whole wheat pie dough and made some spinach and feta hand pies
Wednesday I made pork tenderloin with roasted russet potatoes.
Thursday I was feeling so lazy, wanted to go to the store but didn't. I had forgotten to take something out for dinner the night before. I remembered that I had just read about how to make polenta and had some cornmeal in the pantry. I don't know why but I always thought polenta was going to be hard to make and it's fairly simple and easy, I see more polenta in my future! So I just made up some polenta and topped it with roasted sweet potato.
Friday I made shrimp spaghetti alfredo. Just a simple roux with milk and parmesan cheese. I tried to add some fresh spinach into my portion thinking it might wilt but no such luck as you will see. If i was just cooking for myself I would of added it to the sauce but I'm not and well the other person hates anything green.
