Meatless Monday

Starting to feel like I am getting my eating better under control today, or was it because it was meatless Monday? I started having meatless day as of Jan 1st 2015 and glad that I have kept it up, honestly I don't see a reason to stop. Who knows maybe in 2017 I'll add in another meatless day as a resolution, but for now I am going to focus on the resolutions I have set for this year and continue the ones I successfully completed from last year.

So my major sticking point for today, breakfast. I really need to have an actual breakfast other than coffee.
Lunch today was a pleasant surprise. I took out one of my homemade frozen meals. What I do when I have enough leftovers from my meatless Mondays is that I portion them out in 2 cup plastic containers and freeze them. So I don't have any real excuse to not eat meatless for those times I just get busy and don't feel like cooking, or don't have a plan for lunch or dinner. Such as the case was today. So the container I grabbed looked like quinoa with tofu and peppers. When I came back after the microwave dinged, oh my my my I was greeted with such a warming aroma. Turns out when I had made it, I had used some chili powder! Man that was perfect for today, it was a cool day the temp stuck in the 50s with a cold breeze, nothing like warm chili powder to make you feel all nice and toasty.

As promised from my last blog, polenta was in my future and made some today! I'm always concerned on days like today that I won't get in enough protein so cooked the corn meal with a 50/50 ratio of water and milk. Cut up some onions and peppers to go on top. Sauteed them in some olive oil and you know they just were tasting bland even after some salt and pepper which usually is enough. Did a little worcestershire sauce, nope didn't really help, put in a little anchovie paste which helped a little but I could help but feel something was just missing. Open the fridge and eureka! Poured in a little sauvignon blanc with a tablespoon of butter, let that reduce and not only did I have a sauce but really amped up the peppers to where they needed to be. Ok well maybe I reduced it a little too much, but it still helped out the peppers! Stirred in a tablespoon of butter into the polenta, but just opted out on the parmesan cheese I would of normally used. Figured olive oil and 2 tablespoons of butter, I've got enough richness.

Tomorrow is supposed to be even 'colder' than today, so right now I have a ham bone stock going in the crock pot. I'm hoping to have it done by the morning so that I can make caldo verde. It's so weird, I moved to Florida and I get EXCITED about cool/cold temps! Or is it that I get excited that I actually want warming comforting foods that I mostly avoid having or making in the heat.
