Repetitive Meals

So the last few days have been a bit repetitive over what I've been eating. Pretty much laziness and forgetfulness on my part. Monday night/Tuesday morning I took out my crock pot and made some ham bone stock from the ham bone from xmas. One of the main reasons why I must buy a bone in ham for xmas really. All to make this, and no not the stock but CALDO VERDE!!! For those who aren't portuguese or are not aware of portuguese food, it translates to green soup, and one my grandmother always made. So stock, or water....I prefer stock, then onions, garlic, potatoes, carrots, linguica or chourico, and lots of kale/collard greens/cabbage. Where the soup originated from they use a cabbage that is similar to collards, but on the island of Sao Miguel where my grandmother was born, they've always used kale, so that's what I use. I only make caldo verde when it starts to get cool/cold so I always use chourico which to be honest is just spicy as in hot, linguica. Again for the non portuguese food knowledged out there, linguica/chourico is a portuguese pork spiced dried smoked sausage. Ya um I didn't eat some slices of chourico while I was making the soup, no not me, I would never do such a thing! And my pants just caught fire, oh well.

So for the last few days my breakfast has been coffee and steel cut oats with leftover cranberry sauce that I finally finished today, the sauce not the oats, still have one serving left of them.

Since Tuesday my dinner has been the caldo verde and yesterday I had that for lunch too! I'm not in a rut it's just so freaking good!

I mean look at that picture, doesn't it look freaking amazing?! I just want to dive into it! I just want to eat up all that luscious kale!!! Ok I think I might be bordering on obsessed but it's very soul warming kind of soup, not to mention I only have it once a year and that I helps me feel connected with my grandmother since she passed away.

For lunch today I made a batch of tomato, cucumber, avocado salad with a lemon dijon dressing.

It was so good too, to the point I had 2nds and um might of ate some of the leftovers out of the fridge after dinner.

Been doing good with walking Hally, got 3 after dinner walks in this week, which is what I want to do each week for 2016. Added a little extra of where I walk so that I am getting a mile in, and doing so in just a little over 20 minutes. It will be interesting to see where I am at time wise in a few months from now.
