Back to basics

Saturday, April 02, 2016

Well, the 5th and last load of laundry is in the washer - our first night home from the kid's college tour is full of chores!

I didn't always manage to eat healthy during our week of traveling. But I did meet some very good salads that I am going to try to reverse engineer at home. In NYC, I had a very satisfying salad at a Nepalese restaurant, with carrots, cucumbers, tomatoes, onions, broccoli, sweet peppers, lemon - and a spicy vinaigrette. At an Asian fusion restaurant, I had a very good shredded duck salad with cucumber, avocado, and a light soy sauce vinaigrette. And at a hotel bistro of all places, we had an amazing chicken cabbage salad with a tangy lime vinaigrette. It was like a huge bowl of tasty Asian coleslaw with cubes of chicken breast thrown in. So yum.

Even though I just ate lunch (an embarrassingly huge sale with shredded cabbage, baby leaves, and lots of other stuff) and theoretically should not be hungry, your description of those salads made my mouth water! Sounds deelish!
