Week April 24 - Building a Meal Plan

I am still baby stepping on my new diet so I need to work on a meal plan.

This blog entry will be a work in progress as I try to figure it out.
(parking lot meals - loobia polo - with green beans and ground beef - need to figure out a sub for the rice -maybe cauliflower)

- loobia polo
-Turkey meat loaf
- rainbow salad
- paleo baba ghanoush (home made)

Sunday -
Dinner - (frozen paleo dinner) bison meat loaf, broccoli, rutabaga - plus a dole cherry fruit cup

Monday -
Lunch -
Dinner - salmon. + bean salad. ( my diet does not contain beans but the place I got carry out for the salmon did not have better options at least they were not French fries)

Tuesday -
Lunch -
Dinner - Spaghetti made with lean ground beef, spaghetti sauce, and zucchini noodles also called zoodles)

Wednesday -
Lunch - Left over spaghetti
Dinner - tropical crab wrap (need to double check the sodium as it may need to be a lettuce wrap rather than a smoked salmon wrap)

1 can of crab meat
2 tablespoons of coconut milk (low fat)
2 Tbs shallots
1 (or 2) Tbs Jalapeno, chopped (optional)
2 tsp lime juice
1/2 c baby spinach
cucumber (either 3 to 4 slices added to final sandwich or I prefer sticks of chopped cucumber)
2/3 c pineapple, diced
a couple of slices of thick smoked salmon

Mix all the ingredients except the cucumber and smoked salmon in a bowl. Take out 1/2 the ingredients for each sandwich (makes 2). Use the smoked salmon like a soft taco shell (or I may use lettuce since I now have sodium restrictions. then add the cucumbers.

Lunch - other crab sandwich

    The groceries arrive via peapod on Monday night so I am going to figure out how to freeze organize the cooking. I know I can do the items on the planned list already. I have food coming in to make the parking lot items. I just get really tired during the week so I may end up ordering some no sauce chinese dishes or something easy if I can't figure it all out this week but just keep moving forward.
