For lunch today I made pesto with some basil I've been growing. My herbs have all been doing really well, and I've been getting some great flavor additions to my meals as a result. (Currently growing: rosemary, thyme, sage, chives, and basil. I've room for 1-2 more, but haven't decided what to add.)
I paired the pesto with tomatoes, spinach, roasted eggplant, and some whole grain penne I've been wanting to eat up, and topped it with feta and chicken. It was absolutely delicious! And with three small eggplants ripening in my garden, I have a feeling I'll be making this again.
