Eat a Rainbow

One of the challenges this week was to eat the rainbow. Well, as a household of one, that was a lot of veggies. Then I found this rainbow soup! It makes 9 cups of soup. So I took my trusty Mason jars and filled them with this soup. I have to say it is delicious and healthy.

The great thing is that I can adjust it by adding chicken, or adding some beans- so I don't feel like I am eating the same thing day in and day out. If I am feeling munchy, a cup of this is just the ticket. I am telling myself, if you don't want the soup, you are probably not hungry!

This weeks weigh-in is posted- I stayed the same as last week, but it took some work! I went with friends to Culver's and over indulged ( I did skip the ice cream). The rest of the week was staying on top of the calories. I would have loved to see a loss, but I am good with this for now.

Today I planned this week's menus and made my grocery list. My goal is to spend $125 a month on groceries, I am not there yet, but am getting closer! I discovered a 99 cent plus more than carries produce, which helped a lot. I am buying store brands and really can't see the difference in most things. Since I am eating whole foods, I don't buy processed foods. I miss having a freezer to stock up on meat, but I am also eating more plant based, so a package of chicken breasts last two weeks. Little by little, I am getting there.

I am back on the surgery schedule for the 21st of November. My BFF is driving to Mesa with me, since I probably shouldn't drive while taking pain medicine. I am so looking forward to getting these Rowdy Parathyroids taken care off. Besides not having to deal with kidney stones, I am supposed to see a marked increase in energy. The people who I have spoken with that have had the surgery tell me they felt better right out recovery. That is what I am looking for!

Rather than use a traditional oven ( which is where I am currently storing my pots and pans), I bought a convection microwave. Today I am using the Grill function to cook a chicken breast with a dijon mustard marinade. So I guess I have a smarter than me oven as well as the smarter than me phone. - LOL

I am going to a Thanksgiving buffet with friends. One of the local casinos has a choice of three buffets. Now just to figure out what I am going to eat before I get there and stick to the plan.

I signed with a web hosting service and am working on setting up two websites. One for my daughter's Ashley's Wings foundation, which is a project near and dear to my heart, and one for my fledgling business. Hopefully I can monetize the business so I can travel, my great passion.

I haven't been spending a lot of time on SP, but am still checking in with my morning coffee and trying to stay up with the blogs.

I have been in Tucson 2 1/2 months, and am loving the weather and the amenities. My family has asked if I am thinking about moving back to Oregon, and I told them no, but I will visit when it isn't raining!

Not much new in the corner of the world. We have a new president, so lets pray for his success and give the position the respect it is due. We are all going to be doing what we do, the sun will come out tomorrow and life is what we make it.
