Not as hot today. I'm glad. Yesterday, I waited until 4:00 to do my lunchtime walk because that is when we get a good breeze coming from the Bay that cools everything off. It was still fairly warm but not like what it was at 12:00. Now that the heat has broken, I can walk whenever i want and the green hills won't turn brown so fast.
We've been suffering from CSA overload. It's been a long winter of Kale, collards, leeks and lots of leaves that I don't like the taste of. Last night I looked in our fridge and we had 6 huge leeks hogging up the produce drawer and since it's been so hot the thought of Cockaleekysoup was out so I made Cockaleeky pasta instead. I found a recipe for Cockaleeky Pie and just made it over Whole wheat shells instead. My husband raved about it because it was so different than what we usually have. It called for making a roux with butter, flour and chicken broth. I made it with benecol olive oil soft margarine, whole wheat white flour and fat free low sodium chicken broth. The original recipe called for bacon and that is a food we've pretty much given up due to the nitrates and sodium so I subbed in mushrooms instead and threw in some celery and a parsnip we had in the fridge. It was really good and when I put the modified recipe into the our tracker it only came out to be 453 calories per serving.
This morning I did my official weigh-in for the 5% challenge and it came out 125.5. 125 is my official goal weight and my maintenance plan gives 3% +/- 125 putting my range at 121.25-128.75 so I'm really happy about that.
