LCHF pizza - warning: yummy photos ahead! :)

LCHF Day 8 for me! Made it so far! emoticon

My family usually has pizza every other Saturday, so my dh made the "normal" pizza for them, and I made this one for myself because I couldn't stand the thought of them eating it in front me. So, I made my own version of LCHF Fat Head pizza.

The dough is made from almond flour, flaxseed flour, 2 eggs, 170 g mozzarella and a spoon of olive oil.
After baking it in the oven for 10 min, I added the topping: tomato sauce, oregano, shredded tomatoes, mushrooms and cheese. I baked it for another 10 minutes and voila! emoticon





The dough tastes like every other LCHF dough, weird at first, but you get used to it, but the topping is really tasty. I ate 2 slices and I feel full.

All I have to do now is brush my teeth and keep myself busy until dinner.

    Here is a recipe that I love for LCHF pizza. The crust is made of shredded mozzarella cheese.

    Crust
    2 eggs (I do 3 because our eggs are smaller)
    2 cups shredded Italian cheese blend
    1/4c grated parm (shakey green jar)
    1 tbsp Italian seasoning
    Sprinkle garlic powder
    (Red pepper flakes)

    Pizza
    Tomato paste
    Cooked sausage crumbles
    Pepperoni, cut into fourths
    Crumbled bacon
    Mozzarella cheese blend
    Grated Parm


    Preheat oven to 400. Line biggest baking sheet you have with parchment.

    Mix crust ingredients well. Dump all of it into the center of the parchment then move it around so it is circle shaped, a little smaller than a frozen pizza & & push up the sides so the edges look like crust. It will look small-ish. The pizza gets bigger as it bakes. You don't want it to be too thin or it will just burn. Make sure there are no stray shreds of cheese on the pan or they will burn.

    Bake 20 mins.

    Take crust out of the oven. Spread crust with a thin layer tomato paste (i never measure. A big spoon or 2. ) Leave an edge for crust.

    Add cooked bacon/sausage/pepperoni (cut into fourths). Then cover with a light layer of cheese. You dont need a ton because you don't want the crust to burn before it melts. Sprinkle with Parmesan.

    Bake for 10 mins. The crust will be dark brown but it tastes perfect.

    Take it off the parchment immediately & put it on a cutting board. If you leave it on the parchment the bottom gets soggy.

    Cut & eat. I usually sprinkle with garlic powder.

    It looks great... of course since I am dairy free... you are making me groan. I do miss pizza... but there just isn't a good substitute for cheese. Cheese... my dear friend.. I miss you so much... emoticon emoticon emoticon
